Hopefully someday you can make it down here to Ensenada in Baja, south of the city there are awesome places to visit that will remember you more and more of Hawaii (due to its also volcanic origins).Seriously you're invited to come =), i'm an oceanographer and can tell you of places where almost nobody goes, places almost virgin but sooo beautiful (it's the advantage of living in one of the most pacific, and small cities in México =)).
